National ENERGY GLOBE Award Monaco 2017
In Monaco the STARSNBARS restaurant has developed a specific ethos around environmentally friendly food sourcing as well and promoting public health. This is in keeping with the nation’s ethos also and as such has had a strongly positive reception. The aim of Monacolgy week has been to continue the nation’s environmentally responsible methods and to further secure them in the Monacon way of life.
The STARSNBARS restaurant wishes to evolve from a restaurant into a community social hub. The concept is derived from a desire to promote consistent educational classes throughout the year.
To achieve this the owners will create an ongoing environmentally friendly focal point. Rather than a single week of activities the centre will operate these programmes year round and provide a space from which to hold individual programmes.
The restaurants main innovation is the establishment of the organic gardens which is the primary source of produce used in their food service. The area has a long history of new and innovative methods to make the country environmentally friendly. Such as the use of refuse to make fuel for smaller municipalities, the establishment of free to use electric car chargers and moving government representatives away from fossil fuel burning cars and into electric cars.
The week offers educational programmes in the area of ecology and environmentally responsible practices. The education is designed to give the people the inspiration to continue the practices at home. A particular emphasis is to teach the children about this way of life so that the mistakes of the past will not re-occur. The local belief is that a child educated to respect the environment grows to be a responsible adult.
